Many people feel that since canned food can preserve food for such a long time, there must be preservatives. In fact, there are no preservatives in canned food.

Food spoilage is mainly caused by microorganisms under suitable conditions. To prevent the growth of microorganisms, various control measures can be taken, such as canning preservation.

Canned food is preserved by first sealing and then heating to sterilize, completely killing the microorganisms in the food. After a certain period of high-temperature heating, the microorganisms in the can are eliminated; at the same time, because it is already sealed, microorganisms from the environment cannot enter the can. By controlling microorganisms, canned food can be stored for a long time.

"Ultra-high temperature heating followed by aseptic packaging" is another commonly used method in the food industry for long-term food preservation. Its principle is the same as that of canned food, which is to kill microorganisms through ultra-high temperature heating and then perform aseptic packaging in a sterile environment to prevent microorganisms from entering, thus achieving preservation without the need for preservatives.
